Preheat oven to 450. Once you have steamed and drained cauliflower, put it in a food processor and pulse until you have rice size pieces. Add egg and pulse until mixed well. Add remaining ingredients and stir. Place mixture on pizza stone or pan lined with parchment paper. (I forgot onto put parchment under mine. It stuck to the pan a little and got a little dark around the edges.) Grease a rolling pin and roll mixture outward into a circle ensuring that the outer ring is a little thicker than the middle. Before topping the crust, bake it in the oven for approximately 20-25 min. Allow crust to cool slightly. Add your sugar free sauce and your favorite toppings or continue to follow this recipe for Spinach Mushroom Pizza featured.
TOPPINGS:
4 oz cream cheese, softened
Pinches of salt, pepper, oregano
1 cup fresh baby spinach, chopped
1/2 cup sliced mushrooms
1/4 cup chopped onions
Spread softened cream cheese over pizza crust. Sprinkle on seasonings. Add spinach, mushrooms and onions. Broil in the oven watching pizza carefully until toppings are lightly cooked and golden.
